After a couple weeks of eating non-stop donuts and french fries and everything unhealthy I could get my hands on, my body has been in need of a reset. Traveling hasn't helped, but the second I got home, I started craving these babies: Blueberry Protein Pancakes!
When I'm at home, my typical breakfast is either a morning peanut butter and banana smoothie, that I can take on-the-go, ORRRR when I have a little more time, these protein pancakes are a morning staple. They satisfy any morning baked-goods craving I may have, while being guilt-free!
I should also say, purchasing a magic bullet has been a complete breakfast game changer. I've been more prone to eating healthy at home in the mornings and I use the thing pretty much every day! It's wonderful!
As for the pancakes, if you're not a blueberry fan (I'm only a recent one) you can sub for any other kind of berry (or chocolate chips, sometimes you need them). Easily one of the yummiest ways to boost your energy!
Makes: 8 mini pancakes (serves 2)
Prep time: 10 minutes
Cook time: 5 minutes
1 overly ripe banana
2 scoops of protein powder (vanilla and cookies n' cream are my favorite)
1 large egg (egg whites only)
1/2 tsp cinnamon
1/4 tsp baking powder
pinch of salt
3oz of blueberries (Optional)
1. In my magic bullet blender, I add the egg whites and pulse for about 10 seconds, until slightly frothy. Add the banana (in small chunks), add protein powder, cinnamon, baking powder and salt and blend until the batter is smooth.
2. Heat a lightly greased pan over medium heat. Pour or scoop your desired amount batter onto the pan. I used about 2-3 tbsp to make mini pancakes. Evenly sprinkle blueberries on top of the cooking pancakes.
3. Once the batter starts to bubble in the pan, your pancakes are ready to flip! When they're brown on both sides, they're ready to eat! Serve up with your favorite syrup, greek yogurt, or extra fruit. I enjoyed mine with the Tangerine, Blueberry & Couscous salad recipe also up on the blog. DE-LISH!!
