The Best Zucchini Pizza Crust

Usually, the healthy versions of food totally suck! But this one totally does not.

Seriously! Zucchini pizza crust is where it's at!!!! Like it's regular pizza counterpart, it is extremely delicious. BUT has way less calories and WAY way less carbs. Something this good should be illegal.

As long as you've got a food processor or magic bullet, and a vegetable peeler or cheese grater, it's pretty easy too!

Yields: One 8 inch pizza

2 cups shredded zucchini (approx. 1-2 medium zucchinis)

1/2 cup fresh grated mozzarella

3 large eggs

1/3 cup all purpose flour (can sub coconut, cassava or almond flour)

1 tsp Italian seasoning

1/2 tsp garlic powder (optional)

pinch of salt

Plus all of your favorite pizza toppings!


1. Preheat your oven to 450 degrees fahrenheit.

2. Combine shredded zucchini and eggs into food processor or magic bullet (yes, I use my magic bullet way too much as noted in previous posts). Once the mixture is smooth, transfer to a large bowl. Stir in your mozzarella, flour, garlic powder, salt and Italian seasoning until it's all even.

3. On a parchment (NOT wax paper) lined baking sheet, pour your zucchini "dough" in a circle. It should be about 8-9 inches in diameter. I like to make sure the thickness is even to the edges with a spatula or back end of a spoon.

4. Careful not to shift it to much when transferring to the oven. Bake the crust for 12-18 min or until the edges start to turn golden brown. You should be able to carefully lift an edge to see if the bottom had browned (that's what you want!) Once you've achieved golden brown perfection, remove from the oven.

5. Top with your favorite ingredients! I made one with pizza sauce, more mozzarella, feta, yellow pepper, tomato, basil and red onion. My second pizza (I was hungry, don't judge) I topped with prosciutto (YUM!), spinach, basil, mozzarella, parmesan, red pepper flakes, and red onion.

6. Reduce your oven temp to 400 degrees and bake pizza again for about 10 minutes or until desired cheese melty-ness. Let that baby cool and slice away! Nom nom

If you get it right, you should be able to pick up slices, just like a normal piece o' pie. And it holds up the same way... aka Morning breakfast pizza leftovers are a go!

Bonus, if you have kids, this is a great way to sneak vegetables into their diet.
