The Most Delicious Vegan Quinoa Chili

I've been getting a lot of requests for more vegan recipes, and this one will warm you right up from the cold! Vegan recipes sometimes get a bad rap for being boring, but definitely not this one. It's healthy, delicious, and has just enough chili powder to clear out your sinuses!
I don't know about you but I love a good hearty chili. One that's a full meal. All you need to add is some bread for dunking and your favorite toppings -- cheese! sour cream! avocado chunks! more cheese??! And bam! Taste explosion.
Serves: about 10 (great leftovers)

Ingredients
1 cup quinoa, rinsed
1 1/2 cup water
1 medium yellow onion, finely chopped
1 tbsp coconut oil (or vegetable oil)
3 Tbsp chili powder
2 cloves of garlic, minced
1/2 Tbsp ground cumin
2 large sweet potatoes, diced
1 (15oz) can of diced tomatoes, drained
2 1/2 cups vegetable broth
2 (15oz) cans of black beans, drained and rinsed (or 1 can of black beans, 1 can of kidney beans)
8oz tomato sauce
1 tsp salt (or I like to use something called Herbamare)
pepper to taste

Directions
1. In a small pot, add the rinsed quinoa with water. Over medium high heat, bring to a low boil and cook for 8-10 minutes. Remove from heat, cover and allow to steam for 10 more minutes. Set aside while you work on the next step.
2. In a large pot, add oil and diced onion over medium heat. Once onion is soft and translucent (about 5 min), add the garlic, sweet potatoes, chili powder, cumin and continue to cook for 2 more minutes.
3. Add the diced tomatoes, tomato sauce, and vegetable broth. Stir all together and bring to a low boil for about 5 minutes. Lower temperature back to a medium, add the beans, and cooked quinoa. Add salt and pepper to taste and cook for another 5-10 minutes.
4. Serve with whatever toppings your heart and tastebuds desire! Leftovers are just as great! Can be stored in fridge for 4 days, or freezer for a month! When microwaving my leftovers I like to add an extra splash of broth (1 Tbsp) as the reheated quinoa will soak it up.
