Healthy Peanut Butter Blossom Cookies
Blossom cookies or kiss cookies are always a holiday staple. While my mom was more of a "buy a roll of cookie dough and throw it in the oven" cookie maker, I remember going over to friends' houses and seeing batches on batches of different kinds of baked goods.
My favorites were always Peanut Butter Blossoms. So behold, as an adult I have crafted a new take on the classic. And why mess with perfection you ask? WELL LET ME TELL YOU! These babies are half the calories of the original, lower carb, AND gluten free. I've also done extensive "research" and they taste just as good.
Note: I used dark chocolate Kiss for mine, but classic milk chocolate Kiss works perfectly well too!
Yeild: 20 cookies
Prep time: 15
Bake time: 10-15 min
1 1/2 cup of Peanut Butter (works way better with smooth, but use whatcha got!)
1 1/2 cup of Sweetener (I used Stevia. Or if you don't care about the calories/sugars, granular sugar)
5 large eggs (use whites only)
1 tsp vanilla extract
20 Hershey's kisses, unwrapped
1. In a large bowl, mix together peanut butter and egg whites, slowly stir in Stevia or whatever sweetener you chose and vanilla extract until completely combined. I prefer chilling the dough overnight, but you can skip this step if you are in a cookie rush!
2. Preheat oven to 350 F degrees. Line a cookie sheet with parchment paper. Roll dough into golfball sized circles (approx 1 inch) and place 2 inches apart from each other on the cookie sheet. Optional: before baking, lightly sprinkle a bit more sweetener/sugar on top of the dough balls.
3. Bake for 10-15 minutes. You'll know they are ready when the bottoms of your cookies should just begin to brown.
4. Immediately after you take the cookies out of the oven, place one Kiss in the center of each cookie and press it in, so the cookie spreads out and cracks just a bit! Let your cookies cool completely before serving... the kiss will melt into a weird shape if you move or stack them too soon.
These babies are so freaking delicious! I'm usually not the biggest fan of using zero calorie substitutes for sugar, because you can usually taste the difference. But with these, the peanut butter flavors totally take over in the best way! Happy tastebuds!
